The Forager Within

I teach foraging to connect you to nature and improve physical and mental health in the process. Public and private courses available.

Crow Garlic (Allium vineale) is the overlooked wild allium most people walk past - but to be fair, given how much it can look like some kind of wild grass, it is very easy to walk past and sometimes hard to spot in the first place until you know what to look for.

In this video I explore the concept of toxicity. The word “toxic” or “toxin” is not always black and white, and understanding the “spectrum of toxicity” can help navigate wild food in a sensible rather than sensationalist manner.

Here I explain why winter is a great time to start learning about mushrooms and mushroom foraging, and I also include a reminder of my top five winter mushrooms! Visit my YouTube channel for a longer version where I dive into how to identify each mushroom.

Absurd!! Turkey Tail (Trametes versicolor), a non-toxic mushroom with a long history of use in Asia, and multiple studies done on its health benefits with statistically positive results, has been effectively banned in the UK due its classification as a “novel food”.

I turned a wild mushroom into a boozy chocolate Christmas gift! If you’re looking for a truly unique homemade Christmas stocking filler, this is for you. In this video, I turn wild Jelly Ear mushrooms into a surprisingly delicious festive treat!

Turkey Tail (Trametes versicolor) is the 5th of my Top 5 Winter Mushrooms, and although it’s generally classed as “inedible” due to being so tough, it’s one of the most medicinally powerful mushrooms in our woodlands, handy for protecting against winter viruses!

The 4th of my Top 5 Winter Mushrooms is the Scarlet Elfcup (Sarcoscypha austriaca), one of the most striking and unmistakable mushrooms you can forage in winter! This vibrant red mushroom lights up woodland floors when everything else is dull.

The third of my Top 5 Winter Mushrooms is Jelly Ear (Auricularia auricula-judae), aka Wood Ear. This is an all year mushroom but makes it into my Top 5 as it often looks at its best in winter, is beginner friendly (easy to identify), and has some underrated medicinal properties.

The 2nd of my Top 5 Winter Mushrooms is the Velvet Shank (Flammulina velutipes). A true winter specialist that’s tasty and very good for you! Here I cover how to identify the Velvet Shank, toxic lookalikes to be aware of, as well as when and where to find it!

The first of my Top 5 Winter Mushrooms is the Grey Oyster Mushroom (Pleurotus ostreatus). It can be found all year round but I find it is much more common in winter. Here I cover where to find it, how to identify it, and any look-alike to be aware of.

This Christmas, give the gift of a foraging experience. Foraging course Gift Vouchers available at the website! theforagerwithin.co.uk/product-catego…

Some snippets from my appearance on ITV local news yesterday for their piece on how amazing mushrooms are and what a particularly good Autumn it’s been!

Want a powerful way to support your immune system this winter? In this video, I show you how to make a high-strength concentrated extract powder from Birch Polypore (Fomitopsis betulina) - one of Europe’s most underrated medicinal mushrooms.

New dates for Spring and early Summer 2026 are now live! Look forward to welcoming some of you in Manchester, Sheffield, Huddersfield and Northallerton! Book here: theforagerwithin.co.uk Music: ctto “Getting Back To Nature” by Jon Conley.

How to safely identify the Wood Blewit - a gourmet mushroom of late Autumn and Winter! The Wood Blewit (Collybia nuda) is a great mushroom as it’s delicious (though must be cooked before eating) and appears during the colder months, meaning it can even be found in winter!

Rosehips - nature’s natural Vitamin C supplement! Rosehips pack an incredible punch of antioxidants and Vitamin C, making them great for immune support during the cold months. On a like-for-like basis they blow even lemons out the water when it comes to Vitamin C content.

Yesterday marked the end of 10 consecutive days of foraging courses, a new record! It was even 11 courses in 10 days as on Sunday I delivered 2 courses! March to July 2026 dates will be live on my website in early December, and gift vouchers as always are available!

Here’s why the Fly Agaric (Amanita muscaria) has white dots on its cap!

Family Foraging Course on Wednesday 29th October! Just £15 per person with under 16’s free! Book here: theforagerwithin.co.uk/product/spring… Music: ctto “Forest Walk” by Makana.
