Ginger syrup for sweet potato: Dice ginger root into 2-3mm cubes, until u hve tbsp full. Melt 2-4 tbsp butter, 2-4 tbsp sugar, 1/2 tsp fine cinnamon, 1/2 tbsp honey on low heat. Add 2 tbsp water. Bring to slow boil, add ginger, cover, let simmer for hour, stirring intermittently.

Boil 1/2 cubed butternut in lightly salted water until tender but firm. Drain, set aside 5 mins. Melt tbsp butter, add 2tbsp sugar, 1 tbsp honey and 1/2 crushed cinnamon. Keep stirring (low heat) till sugar+hon incorporated into butter. Add bttrnut, let simmer, stir occasionally
Preboil baby potatoes in salt water till tender. Melt 2tbsp butter+2tbsp olive oil in flat saucepan with lid (low heat). Add chopped garlic, fry until translucent. Add potatoes. Stir intermittently, fry gently on low heat (30 mins). 30 mins b4 serving, sprinkle parsley loosely.

If you find that your roast potatoes are not crispy enough, it could be that you are using the wrong kind of potato. Over here we get ones sold as "chips potatoes". Those are the ones. It could also be that your potatoes were not cooled down completely b4 being placed in the oil.

Boil water with large tsp Bovril for smoky flavour. Peel and cube chips potatoes. Boil in Bovril water until tender, drain and let cool completely. Roughly toss with salt. Rest 30 mins. Add cubes 1 by 1 to canola oil preheated to med high. Stir occasionally until golden brown.
When I was a small boy, my dad used to roast a chicken every Sunday. All 4 of us would eat our fill and then there was still enough left over for late evening sandwiches. Today, my partner and I can finish an entire chicken in one sitting. Are chickens getting smaller? 🤔#chicken
Stew secret: Add soya sauce to your pot gravy (fried onion&garlic, Worcester sauce, vinegar, pepper and carrots). Fry meat until sealed properly, cover with sauce and slowly simmer on medium heat. Meat must stay covered in liquid. Be patient - meat must be soft and tender. #meat
I believe meat should be tenderized in naturally occurring acids like those in citrus fruits. As an experiment, I tenderized and marinated pork chops in orange juice to help caramelize the fat and tenderize the chops while keeping them juicy. Worked a treat! #pork #cookingtips
