Craig Gunserson from Baylor is speaking to #RMC2023 about food insecurity. Food insecurity is the #1 indicator of well being in America. Most folks that are food insecure are only that way for a few months and only a few days in the month.
Our scientific meeting for Meat Science is happening this week. #RMC2023 is my 21st RMC. How many have you been to?
Today im listening to @gerrybrooksprin at the #fcstat conference with several Family and Consumer Science Teachers from all over Texas.
All science can do is turn out the false lights so the true light can get us home. - Tobias Wolff, Old School (2003)
75 years of heritage. In 1940’s there were fewer than 6 men with PHDs in meat science. In the 50’s and 60’s meats men became meat scientists. -Bob Bray #rmc2022
Apparently there are 2 #RMC2022 conferences going on right now. The 75th Reciprocal Meats in Des Moines and the 38th Reaction Mechanism in Boulder. Maybe the meat scientists will learn a little chemistry and the chemists will learn a little about meats!
Binger: 43% of exports are shipped chilled (premium meats that age during the 21 day shipping time) and 57% are shipped frozen. #RMC2022 shipping delays have created issues with chilled products

Binger. The US is the envy of the world for beef production. We also have the considerable beef demand domestically. #RMC2022
Binger on what cuts are exported. Asia takes the front end of the carcass; Mexico will take the rear. #RMC2022
The BSE case in Dec 2003 decimated our beef export demand and it took 15 years to rebuild those export markets. #RMC2022
John Scanga on supply chain issues during the pandemic. Every day was a surprise. You never knew how many people were going to come to work every day. #RMC2022
Bacon tells us about an HR person that said he’s never fired someone because of lacking technical skills. It’s soft skills and ability to communicate and work with others that are lacking. #RMC2022
Bacon: teams have to enjoy each other and work well together to be successful. We come to #RMC2022 because we enjoy it. Organizations are the same way. You come back every day because you like it.
Craig Bacon on culture and values in an organization. Team@members need to know them from day one. They need to line up. #RMC2022
Stinson: retention in the talent pool is just as important as retention in the organization. We want to keep good people in the meat industry/ food industry. #rmc2022
