Last suggestion for spring produce to incorporate in meals: Leeks & onions. Besides adding tastiness to everything from casseroles, quiches, & frittatas to salads & other vegetable sides, they also contain vitamins, minerals, & antioxidants, & they have antimicrobial properties.
This is the best time of year for fresh salads and smoothies! Lettuce and other leafy greens, like swiss chard and kale, contain vitamin A among many other vitamins and minerals. Kale chips are a great way to take advantage of the bounty as well.
More spring produce fun: Citrus fruits like grapefruit, lemons, and kumquats, contain high levels of vitamin C. Incorporate them into smoothies, salads, or find a recipe that includes them as a way to boost flavor. (and kumquats are just cute, right?)
Spring is here in the US and it's time to make the most of seasonal produce for optimal health. Are beets plentiful where you are? Give 'em a try -- they can boost nitric oxide and may increase athletic performance.
