Many believe saturated fats increase LDL-C. This is incorrect. Rather plant sterols (as found in seed oils) inhibit cholesterol absorption, lowering LDL. Hence coconut oil (92% saturated fat / sterols) lowers LDL-C when compared with butter (51% saturated fat / NO sterols).
