There’s a beautiful recent paper by Padilla et al that models this process mathematically and computationally (with stunningly accurate results): page.math.tu-berlin.de/~chern/project… (One of these is a simulation; the other is a photograph:) #DiscreteDifferentialGeometry

Discrete Differential Geometry - Welcome Video
We did three iterations of #DiscreteDifferentialGeometry: C++, Python, JS/WebGL. The latter works *way* better than the first two (especially for non-CS majors), but only because they can edit native JS code *in-browser*. No linker errors; no emscripten. geometry.cs.cmu.edu/ddg

On my list of 500 mathy things to do is to tesselate the flat version into a triangular mesh, glue the corresponding boundaries, and then try #DiscreteDifferentialGeometry curvature flow to get the final genus 3 surface, e.g. as in cs.cmu.edu/~kmcrane/Proje… by @keenanisalive et al.
There's a recent paper by Padilla, Chern, Knoppel, Pinkall, and Schröder that simulates this exact example using some beautiful ideas from differential geometry: youtube.com/watch?v=oUubW4… (Paper here: www3.math.tu-berlin.de/geometrie/wp_p…) @siggraph #DiscreteDifferentialGeometry
