Hand-picked grapes, well-handled and placed in small 15kg crates transport beautifully (see photo). A bit of rain water, some grass and a dozen or so berries is all that's dislodged in transit. So everything can be pressed in West Sussex in perfect conditions. #parcelbyparcel

Dosage trials today - one wine, six ways. Important to get this step right so we taste different dosage levels after 3 and 6 months before deciding how to proceed with a wine. #ParcelByParcel @Nyetimber
Racking evaluation on a few base wines today. As they complete MLF we do regular tastings to decide when to come off lees prior to blending. There's no formula - it's about getting the most from each vineyard block and varies by vintage #ParcelByParcel @Nyetimber
