Fergassa rolls went out to customers this week. Cheese, onion, garlic in a soft bread dough. What’s not to love?! I had extra dough so I used baking rings to form some. I like the square but the round seems a little more...dainty! 😂 #Edinburgh #microbakery #breadsperiment

#bagels #breadsperiment Divided bagel dough in half after mixing. Half went into the fridge for 22hrs and the rest followed my usual same day bake process. 1st photo is the same day bake. 2nd is the cold bulk batch which, despite me over proving them, turned out well. #edinburgh

A few weeks ago I made some buns using fermented grape water as a leavening. I've done the same again but using fermented fruit pulp. The result - a lovely sourdough type texture and taste.

I declare this #breadsperiment a complete success! At least while warm. Lovely texture and the bits of red pepper work wonderfully
