#bagels #breadsperiment Divided bagel dough in half after mixing. Half went into the fridge for 22hrs and the rest followed my usual same day bake process. 1st photo is the same day bake. 2nd is the cold bulk batch which, despite me over proving them, turned out well. #edinburgh
Playing with a favourite recipe today. Swapped water for milk and egg wash before baking. Flavour and texture amazing. Don’t be afraid to experiment with a recipe you know. Each change will bring something new to the loaf. Some good, some bad but usually edible! #breadsperiment

A few weeks ago I made some buns using fermented grape water as a leavening. I've done the same again but using fermented fruit pulp. The result - a lovely sourdough type texture and taste.
I declare this #breadsperiment a complete success! At least while warm. Lovely texture and the bits of red pepper work wonderfully
