Starting a sentence with "I don't know" is very endearing to me. That kind of raised pitch, questioning, response type "I don't know". Though it's often followed by an assertion of fact, it seems healthy to undermine any assertion before you make it. Just to be safe.

Walked in the sunshine this morning to buy bread & eggs from the market, came back and picked veg & herbs from my garden for breakfast. So thankful for such quietly wonderful things.
